Let's say I live in a regular neighborhood. My neighbors then decide to sell to a developer who doesn't like me. The problem is that he buys all the land around me. Since I am completely surrounded by his land and he doesn't let me on how do I live? I don't have enough stuff to live "off the grid" and still need to shop or go to work. What is the remedy?

You get a court order to have access to your land. No judge in this country would deny someone access to their land.
Or you could purchase a right of way...
Or you could sell to the developer...

If you just had a verbal agreement with your previous neighbours, you may be screwed without costly legal hearings. If you had an easement then they can't legally take away your access. If the road you used was formerly a REAL 'state/city' road, you could in theory sue and if they had removed/destroyed the road the developer could be held liable.
If you can find some info search out about the Londonderry Fish and Game Club. They had a town road destroyed by a guy who wanted to make a golf course.... The club COULD have made him rebuild the road THROUGH his golf course... Instead over lots and lots of time we had an easement under the PSNH lines.... our access is supposedly much easier now. I haven't been there since.
